I’ve been enjoying a new cookbook we got last Fall, “Nordstrom’s Family Table Cookbook,” a delightful addition if you have ever enjoyed a meal at one of their cafe’s in the midst of a day of shopping. It has been cold here and soup has been the perfect way to get a lot of fresh veggies into our bodies, while also satisfying our bodies with something warm. I have been able to take many of the recipes and adjust to the supplies I have and flavors I love. This soup I was able to use several red bell peppers, green bell peppers, yellow bell peppers, carrots, Anaheim chilies, onions, garlic, spinach, fresh and canned tomatoes, and for a bit of protein some white kidney beans.
