Black Cod -French Style

 

1 lb. black cod, boneless and skinless

1 shallot, diced

2-6 tablespoons of butter

2 tablespoons of minced garlic

2-3 teaspoons Herbs de Provence

4-5 tablespoons of shredded Swiss or Gruyère cheese

 

In a skillet heat 2 tablespoons of butter and the shallot. Allow the flavors to meld for a few minutes on medium heat, add garlic and stir for another minute, then add fish and herbs and cook on low to medium low. Add more butter as needed; the goal is to have a bit of a sauce.

When fish is completely cooked, transfer to a buttered baking dish top with cheese       and dot with a couple of very small pieces of butter, broil until cheese is golden   brown and bubbly.

Salt and pepper to taste.
