Lemon Poppy Seed Muffins  


Poppy Seed Muffins

Poppy Seed Muffins                              

                                                                                                                                                                                                                                                                                                                 Preheat Oven:  400º  

                                                                      Bake 10 minutes                

                          Reduce Oven: 350º           

                                                                      Bake 7 minutes                  

                             (until toothpick comes out clean)


Mix dry ingredients together                           


1 2/3 Cups All –purpose flour                             

1 teaspoon Baking Powder

½ teaspoon Baking Soda

1 Teaspoon Salt


Mix the following ingredients completely:


2 large Eggs – well beaten

½ Cup Sugar

1 12.5 oz. Can of Solo brand Poppy Seed filling

1 teaspoon Vanilla

1 Teaspoon Lemon Extract

Dash of Lemon Juice and grated Lemon peel

1/3 Cup Half & Half

1/3 Cup Water.                               


Combine all the ingredients.  Do not over mix. Spoon into a greased or paper lined muffin pan.  Bake in preheated oven.       Makes 12 muffins
