Here is a super easy side dish or vegetarian main dish, just adjust your amount of cheese accordingly.
- yellow squash
- zucchini or grey squash
- at least 1 tomato
- roasted chili’s (optional)
- cheese curds or shredded cheese
Your ratio is based on what you have in the house and/or preferences. I would start with 2 of each squash, 1 cup of corn, 1 large tomato, and 4 oz. of cheese curds
