Roasted Chili and Squash Side Dish or Main Entree

Here is a super easy side dish or vegetarian main dish, just adjust your amount of cheese accordingly.

You’ll need:

  • yellow squash
  • zucchini or grey squash
  • at least 1 tomato
  • corn
  • roasted chili’s (optional)
  • cheese curds or shredded cheese

Your ratio is based on what you have in the house and/or preferences.  I would start with 2 of each squash, 1 cup of corn, 1 large tomato, and 4 oz. of cheese curds
